Position Overview:

To assist F&B Operations & Culinary management with daily operation of the galley and related areas, ensuring a high level of sanitation is maintained, and that company and USPH procedures are always followed. The role is supervisory in nature and acts as a delegate of the Asst. F&B Manager to achieve routine and tasked goals 


Position Duties and Responsibilities:

  • Lead by example always keeping the Carnival Vision statement, Culture Essentials, and Values always at the forefront.
  • Ensure compliance, auditing and managing all regulatory procedures and protocols as outlined in GHESS and VSP Manual Section 7 as applicable to the position and Auxiliary department.
  • Assisting the AFBM in ensuring operational galley efficiency and excellence during service periods is achieved in collaboration with Auxiliary, Culinary, Beverage Ops and Restaurant teams.
  • Owns the breakdown & subsequent wash down of galleys after service.
  • Assisting the AFBM in management and conducting all applicable supply operational inventories and ensuring optimal par levels are maintained. Report shortages to AFBM accordingly.
  • Monitor work schedules of the Galley Attendants ensuring due compliance with the MLC regulations as it relates to
  • the Auxiliary Services
  • Monitor any equipment breakdown information/request received or observed is escalated to the relevant technician on duty or AFBM for further processing of the Work orders.
  • Assist the AFBM in investigating route cause malfunctioning of equipment’s by reviewing spare parts ordered and ability to garner the needed cost of repairs information if needed.
  • Demonstrate complete knowledge of all Food operation equipment’s used onboard along with specific usage, cleaning and
  • maintenance of each equipment as required.
  • Ensure galley attendants are trained & empowered to operate the and clean all galley equipment’s with due compliance to PH, Environmental, Safety & OH&S protocols.
  • Ensure USPH Proficiency and Preparation of the warewash areas as it relates to HESS procedures & the latest updated
  • version of the VSP Manual Section 7.
  • Conduct objectively driven briefings to pass necessary updates & information & allocate jobs & tasks
  • Ensure punctuality & grooming standards of the Galley Attendants.
  • Observe team members to identify talent & ambition to recommend & groom them towards next level.
  • Ensure that all personnel assigned to operation are outfitted as per CCL policy and have PPE for the assigned task
  • Perform other duties as directed by the Assistant F&B Manager as it applies to the position and within the scope of
  • operations.
  • Always apply hospitality standards in guest and crew areas. Extend appropriate greeting to all guests and crew at
  • every opportunity.
  • Manager of storage lockers ensuring optimal inventories, upkeep & proper storage compliance.
  • Chemical usage, handling & storage: ensure compliant usage & provision as required.
  • Ensure that Auxiliary teams is clearly aware of their duties as an able-bodied seaman to assist the ships US Coast Guard goals
  • Responsible for supervising compliance with regulatory and company policies and procedures pertaining to garbage separation and disposal within the Food operations department.
  •  Supervises and assists the AFBM in ensuring compliance with current company processes and procedures pertaining to the management of food waste with focus on ensuring the proper separation and disposal of Processable (soft) and Non Processable (hard) food waste.
  • Assists AFBM with the tracking and reporting process of food waste volumes generated (when applicable) and disposed onboard. Ensure placement of appropriate bins in all waste receiving areas (ware wash/galleys/hand wash sinks). Ensure all bins are appropriately tagged & filled to prescribed levels.


Minimum Requirements:

  • Minimum 1 years experience in a Supervisory role within a Galley/Kitchen environment
  • Previous experience as Galley Utility, Galley Attendant or Kitchen Porter
  • Positive attitude,
  • Fluency in conversational English
  • Ability to coach and motivate others.
  • Follows proper hygiene practices.
  • Must be physically strong and able to lift a minimum of 60 lbs and sustain physically challenging work for up to 9 months at a time.
  • Should have a desire to progress in their career


JOB REQUIREMENTS
Experience Level

You should have at least 2-4 years of experience in a similar role.

Conversational English

Fluency in spoken English to connect with guests is required.

Guest Facing Experience

Minimum guest interaction might be required.

Physically Fit

You must pass a Seafarers Medical Fitness Examination and be able to lift up to 50lbs unassisted.
