Our Guest love to eat and are particularly fond of all the meat dishes we serve on board. As an Assistant Butcher for Carnival, you will be responsible for the day to day issuing of meat, poultry, and fish and for handling the products as per United States public Health guidelines as part of the small but FUN Storeroom Team working behind the scenes to ensure our guests have everything they need to have a fun memorable vacation of a lifetime.

 Job Functions:

  • To understand & follow company specifications regarding portion, cut, and quality and advise Chef and Storeroom Management of any discrepancy of same
  • To assist in physical loading of all meat, fish and poultry items and ensure that all items are stored & stacked as per USPH requirements.
  • To report to Storeroom manager any discrepancy in goods received in a timely manner.
  • To closely follow thawing cycle as specified by the Chef. remove packaging. Prep & cut meats, fish & Poultry as required by the Chef.
  • maintain a clean and safe workspace, ensure that all areas of responsibility are clean and sanitized after use.
  • Ensure proper documentation process as per company guideline is followed while issuing the items.
  • To ensure that all utensils, cutting boards and containers are properly washed, rinsed and sanitized before and after use.
  • Maintain strict adherence to protocols for preventing cross-contamination between different types of meat and other food items.
  • Label the items when moved to thawing by use of butcher thawing tags. handling of returns from all areas and label them accordingly and issue the returns first.
  • To maximise the yield of meats & minimize waste. rotate stock & ensure First in First Out (FIFO) is followed.
  • To ensure that all Cold rooms and freezers are maintained at the recommended temperatures & any inconstancies are reported promptly to Storeroom Manager.
  • Assist in the maintenance and cleaning of meat processing equipment. Report any malfunctions or maintenance needs.
  • To ensure that all items are properly labelled, weighed, and stored prior to inventory. To assist the Butcher with the inventory process for all Butchery items, including a physical count of the items.
  • Ensure that the preparation rooms are always properly secure, and that product is not issued without an approved Requisitions.
  • Liaise with Storeroom Manager and Chef on a daily basis in regard to shortages, slow moving items, etc.
  • Be willing to undergo training in the safe and efficient operation of pallet jacks to support the loading and unloading of meat supplies.
  • Ensure company specified freezer jackets are worn on all occasions when entering a freezer.
  • To ensure that company specified uniform is always worn, including all company directed safety gear.
  • Maintain awareness of safety procedures and emergency protocols relevant to onboard operations. Participate in safety drills and training sessions as required by the ship's management.
  • To assist the Storeroom management and Butcher in all areas within the storeroom as required.


Job Requirements:

  • Fluency in conversational English, positive attitude, motivated.
  • High school diploma and technical training in Butchery is required.
  • 1+ years’ experience as a butcher or similar in a commercial, hospitality outlet or other Cruise Line.
  • Must be familiar with different cuts of meat and ability to carve carcasses and handle whole fish.
  • Must be able to lift a minimum of 60 lbs and be physically strong.
  • Well groomed, follows proper hygienic practices.
  • Computer knowledge is advantageous.
JOB REQUIREMENTS
Experience Level

You should have at least 1-2 years of experience in a similar role.

Conversational English

Fluency in spoken English to connect with guests is required.

Guest Facing Experience

Minimum guest interaction might be required.

Physically Fit

You must pass a Seafarers Medical Fitness Examination and be able to lift up to 50lbs unassisted.
