Position overview:

Highly skilled and trained Dim Sum cook with a strong foundation in traditional and modern Cantonese dim sum and an extended knowledge of diverse sushi preparation, Japanese dishes, Asian cuisine, and especially Chinese wok-style cooking.


We are looking for candidates who possess mastery in handcrafted dumplings, buns, and sushi making and regional Cantonese specialties and demonstrate consistent excellence in flavor, texture, presentation, and production flow in a high-volume hospitality environment.


Position duties and responsibilities:


  • Proficiency in a full range of handcrafted dim sum offerings, including dumplings, har gow, siu mai, bao buns, and steamed specialties.
  • Strong knowledge in Asian kitchen operations, including stir-fried dishes, broths, noodles, and grilled items.
  • Experience in Japanese cuisine fundamentals, sushi and sashimi preparation , ensuring proper handling, slicing, and plating.
  • Excellent knife skills, dough shaping, and steaming techniques.
  • Ability to maintain product consistency and recipe compliance across multiple venues and service points.
  • Maintaining efficiency in high-volume service without compromising on presentation or quality.


Position Minimum requirements:


  • All candidates must be at least 21 years of age and have fluency in conversational English
  • A diploma or certification in culinary arts.
  • The necessary exposure and skills to match the duties of the position.
  • The candidate should possess a minimum of 2–4 years of experience in luxury hospitality, cruise lines, or upscale Asian restaurants.
  • Prior shipboard experience is strongly preferred.
  • A sound understanding of sanitation (USPH/HACCP) and food safety best practices is essential.
  • At least 21 years old.

Fluency in spoken English to connect with guests is required.

Guest Facing Experience

Some level of interaction with guests will be required.

Physically Fit

You must pass a Seafarers Medical Fitness Examination.
